I choose hotels by their tiles and typeface. I stay for the service and the wine list. After two decades in hospitality and six years building Brand & Spice, I work at the point where a property's concept and its guest reality are supposed to meet - and sometimes don't.
The guest does not experience departments. They experience the hotel. That is the gap I work in.
